Working alongside them and inspired by their passion, Chef Merlo observed a simple yet powerful reality: within Noliane, young Senegalese people demonstrate raw talent and exceptional potential. He saw how, with the right training, passion, and mindset, a dishwasher could evolve and reach the highest levels of gastronomy. Convinced that talent deserves to be cultivated, he created Life Chance, Life Change, a program where discipline, learning, and ambition pave the way to real career opportunities.

Each year, six employees are selected for an immersive culinary journey to Europe, an experience fully sponsored by Noliane. During this trip, they discover the kitchens of fine restaurants, meet world-renowned chefs, and visit brigades where precision and creativity dictate every gesture. They dine in these exceptional establishments, awakening their ambition and opening their horizons to the excellence of international haute cuisine.
